Pareve Cheese Cake
Crust:
- 1 Cup Nuts
- 2/3 Cup chopped Dates (soak dates in warm water for 10 minutes)
- 1 Tbsp. Oil
- ¼ Tsp. Salt
Blend together and press into round pan, you can double the recipe and use for topping.
Filling:
- 4 eggs
- ½ Cup Demarrara sugar
- ½ Cup oil
- ½ Cup Spelt Flour
- 1 tsp. pure vanilla extract
- 1 tsp. baking powder
- 1 can pineapple
Blend together all ingredients. Pour into prepared pie crust and bake on 350 F for 45 minutes. Crumble remaining crust mixture for topping (or use fruit filling of your choice).
