Delicious Quinoa and Sprouts Salad

This is one of my most popular weekday meals – my kids love it. I put out all the vegetables in separate bowls and let them take as much of each as they want. They each make their own individual salads, drizzling on the olive oil and sprinkling the pepper by themselves.

1 cup lettuce, chopped
½ cup sunflower seed sprouts
½ cup radish sprouts
¼ cup red pepper, chopped
¼ cup cucumber, chopped
1/8 cup onion, chopped
¼ cup tomato, chopped
½ cup cooked quinoa
1 tbsp olive oil
A pinch Himalayan salt
A pinch of freshly ground black pepper


1. The above amounts are for one adult size portion.
2. To cook the quinoa: Put 1 cup quinoa and two cups boiling water in a small saucepan with a pinch of salt. Cover, and cook on a very low flame for 20 minutes.
3. While the quinoa is cooking, clean and chop the vegetables.
4. Layer up all the vegetables, add the quinoa, drizzle with olive oil, and season with Himalayan salt and freshly ground black pepper.
