Pesach Brownies

These brownies are so easy to make and you won’t even know they’re pesachdik. So much better than the “classic” chocolate cake we used to make! (Credit for this recipe goes to Shoshana Friedman, my aunt Toba’s sister-in-law. Who also happened to have been my third grade teacher.)

  • 4 eggs
  • 1 c. oil
  • 1 ¾ C. sugar
  • ¾ C. cocoa
  • ¾ C. potato starch
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 c. chocolate chips (I have not found chips in Israel that don’t have vanillin. I have, however, found inexpensive bars of parve chocolate with real vanilla. So I have been using 1 bar of dark chocolate broken into pieces or chopped.)
  • 1 c. ground walnuts (optional)

Mix, pour batter into a 9/13” pan, sprinkle the chocolate on top and push into cake. 
Bake 160ºC./325ºF  for 40 min+
Test with toothpick (but chocolate chips can be tricky!) or by jiggling the pan
