Apple Crumble

This recipe has been adapted from a dessert that my Grandmother used to make! I have a lot of fond memories of her serving this dessert. This recipe is not a soaked-flour recipe but it is still healthier than most other desserts. It uses olive oil and plenty of fruit, and is definitely my most popular crowd-pleaser. It should be served warm.

2 ¼ cup whole wheat/spelt flour
1 cup raw cane sugar
½ cup olive oil
1 tsp cinnamon
1 tsp nutmeg
8-10 apples peeled and chopped
4 plums/pears, peeled and chopped, optional

1. Put flour, sugar and spices in a bowl, mix lightly.
2. Add olive oil, mix thoroughly. The mixture should resemble crumbs.
3. In an oven-proof glass dish put all the fruit, then spoon the crumble topping over it. The dish should be about ¾ full of fruit, and a ¼ full of crumble topping. I pile up the fruit, after it cooks, it goes down.
4. Bake at 170 C for 45 minutes – 1 hour approximately. It should be bubbling up the sides of the dish when it is done.
5. Serve warm.
