Vegetable Soup

Peel vegetables of your choice (butternut squash, pumpkin, carrots, kohlrabi, sweet
potato, squash, onion, garlic) and place in pot. Add water to cover the vegetables.

Cook until vegetables are almost completely soft and then add green leafy vegetables
(coriander, parsley, and dill) and cook a little more.

When finished, remove from flame, add sea salt and ground black pepper to taste, and
blend. (I usually add a little olive oil before blending.)

For variation, you can grate the vegetables before cooking. When it is finished cooking,
add the sea salt and black pepper.
