Doughnuts recipe!

1 1/2 cups warm water
1/4 cup honey
4 teaspoons dry yeast

Combine above ingredients and let sit for 5 minutes.

Add: 2 egg yolks and 1 teaspoon vanilla

Mix then add: 5 cups white spelt flour, 1 teaspoon salt and 1/2 teaspoon cinnamon. Knead and let rise for 1 hour.
Roll out the dough.
Use a doughnut cutter or top of a glass to make circles. (If dough is sticky add more flour when rolling and shaping). Leave to rise 10 minutes.
Drop the circles into hot oil and fry on both sides.

I used almond oil and then drained on a paper towel.*

*I mixed together cinnamon and demerara sugar and sprinkled it on top of the donuts when they were hot.
