Pareve Cheese Cake

Crust:

  • 1 Cup Nuts
  • 2/3 Cup chopped Dates (soak dates in warm water for 10 minutes)
  • 1 Tbsp. Oil
  • ¼ Tsp. Salt

Blend together and press into round pan, you can double the recipe and use for topping.

Filling:
  • 4 eggs
  • ½ Cup Demarrara sugar
  • ½ Cup oil
  • ½ Cup Spelt Flour
  • 1 tsp. pure vanilla extract
  • 1 tsp. baking powder
  • 1 can pineapple

Blend together all ingredients. Pour into prepared pie crust and bake on 350 F for 45 minutes. Crumble remaining crust mixture for topping (or use fruit filling of your choice).
